Budget Conscious – 15-Minute Breakfast

Finished BreakfastDid you know that a recent study claims that approximately 31 millions Americans skip breakfast each day? Over the years I have been an intermittent breakfaster. There was a period in my 20s when I practically lived off cereal and Cinnabons; all day, every day. Trust me, breakfast three times a day gets boring fast. Since moving to Huntington and trying to eat healthier I have eaten breakfast regularly. Once getting into that groove I have found that I need to have breakfast to start my day off right.

When life speeds up, as it often does, my husband and I find ourselves running through McDonald’s often. Recently I have been thinking about the amount of time and money we spend during our McDonald’s forays. Looking at past receipts I would say our average trip costs us $10 and we spend an average of 15 minutes traveling to and waiting in line at MickeyDs. Adding a couple of fancy coffee drinks can up the total dramatically. We live fairly close to a McDonald’s and it is only a few minutes away. As our annual summer slowdown has rolled in cooking breakfast has again become a priority. Bacon and eggs are our breakfast staples. I love eggs because I can incorporate just about anything into them.  I will toss leftover cooked veggies, salsa, and whatever veggies have been hanging out in my fridge for too long.  I decided to run the numbers and see what our Wild Ramp breakfasts costs in terms of dollars and time. Today’s version includes shredded zucchini and mushrooms. Here we go:

Souped-up scrambled eggs, bacon, blueberries, and coffeeIngredients

Silverbridge Coffee – $9.99/11 oz. – $.20 (for two servings)

Four Seasons Farm eggs – $3.75/dozen – $1.87 for six

Zucchini (from our garden, but it is runs $1.59) – 4 oz. – $.40

Joe Salyers mushrooms – $5.50/quart – 1/4 of package – $1.38

Home Place Blueberries – $4.00/package – 1/4 package – $1.00

Rolling R bacon – $5.29 lb – 5 oz.  – 1.65

Total: $6.50

And how long did it take from stovetop to tabletop? 14:31
